Autumn Mashtini: Squash and Mashed Potato Martini
The perfect taste for the season, this Mashtini perfectly combines cooked vegetables and Owens Sausage in an eye-catching way.
Ingredients
- 2 Cups butternut or acorn squash cubed
- 1 zucchini cut into 1/2" slices
- 1 Tablespoon olive oil
- 1/4 Cup Kalamata olives sliced
- 1 Tablespoon capers drained
- 1/2 Tablespoon basil minced
- 1/2 Tablespoon parsley minced
- 1 Package Bob Evans Original Mashed Potatoes
- 1 Cup Owens Original Pork Sausage Roll cooked and crumbled
- 2 Tablespoons parmesan cheese shredded

- Preheat oven to 425°F. Place squash and zucchini on a rimmed baking sheet and toss with oil. Roast for 15 to 20 minutes or until tender and browned. Remove from oven and stir in olives, capers and herbs.

- Place about 1/4 package of mashed potatoes into each martini glass.
- Top mashed potatoes with 1/4 of cooked vegetables.
