Arroz con Leche with Glazed Apples
This sweet Latin style treat, using our Glazed Apples, is one you just have to make for your family and friends!
Ingredients
- 1 Package Bob Evans Tasteful Sides Sliced Glazed Apples
- 2 Cups water
- 1 Cup long grain white rice rinsed
- 1 4-inch cinnamon stick
- 12 Ounces low fat evaporated milk
- 14 Ounces low fat sweetened condensed milk
- 1 1/2 Teaspoons vanilla extract
- 1/4 Teaspoon salt
- 2 Large eggs
- Ground cinnamon for garnish

- In a medium pot, combine water, rice and cinnamon stick. Bring to a boil over medium heat.
- Decrease heat to low, cover and cook for 12 minutes until the rice absorbs the water. Remove from heat.
- Remove the cinnamon stick from the rice. Add evaporated milk, condensed milk, vanilla and salt to the rice. Stir to combine.
- Scoop out 1 cup of rice mixture and place in a bowl. Add eggs to the rice in the bowl and whisk until mixed thoroughly.
- Return the egg and rice mixture to rice pot and stir to combine. Heat for 5 minutes over medium heat, stirring frequently.
- Remove from heat and set aside for 5 minutes to cool.
- Stir in apples. Let mixture thicken and cool to room temperature.
- Serve and garnish with ground cinnamon.
