Sweet Potato Bars with Streusel Topping
Our mashed sweet potatoes paired with this streusel topping are a irresistible treat for dessert.
Ingredients
- 22 Ounces Bob Evans Mashed Sweet Potatoes
- 2 Large eggs
- 2/3 Cup buttermilk
- 1/2 Cup butter melted
- 1 1/4 Cup brown sugar
- 2 Cups all purpose flour
- 2 Teaspoons baking powder
- 1 Teaspoon salt
- 1 Teaspoon pumpkin pie spice
For the Streusel Topping:
- 1/2 Cup brown sugar
- 1/2 Cup old fashioned oats
- 1/2 Cup all purpose flour
- 1/4 Cup butter
- 1/2 Cup pecans or walnuts chopped

- Preheat oven to 350F degrees.
- Add sweet potatoes, eggs, buttermilk, melted butter and brown sugar to a large bowl. Mix together until combined.
- Add flour, baking powder, salt, and pumpkin pie spice. Stir together until smooth and all combined.
- Pour into a greased 2 quart baking dish or 9x13 pan.
- In a small bowl, add all streusel ingredients and mix together until a fine crumble. Sprinkle over cake batter.
- Bake on center oven rack for 1 hour 15 minutes to 1 hour 20 minutes or until a toothpick inserted comes out mostly clean.
- Allow to cool to room temperature before serving.
