Quick and Easy Cowboy Hash

Ingredients

  • 1/2 Pound ground beef (or turkey, breakfast sausage or chorizo)
  • 1 Package Simply Potatoes Diced Potatoes with Onions
  • 4 Ounces canned diced green chilies
  • 1/2 Teaspoon garlic powder
  • 1 Teaspoon chili powder
  • 3/4 Teaspoon salt
  • 1/4 Teaspoon pepper
  • 2 Cups spinach coarsely chopped
  • 2 Teaspoons olive oil
  • 3-5 eggs
  • 1/2 Cup cheddar cheese shredded
  • 1 tomato chopped
  • 2 green onion chopped

Instructions

  1. Heat large skillet over medium-high heat and brown the ground beef.
  2. When the beef is fully cooked, add the Simply Potatoes Diced Potatoes with Onions, diced green chilies and spices. Cook, stirring occasionally, 10 minutes or until potatoes are tender.
  3. Add spinach and cook 1-2 minutes or until spinach is wilted. Remove from skillet.
  4. Add olive oil to skillet and once it is hot, add the eggs. Fry until whites are set.
  5. Top the hash with cheese, tomato and green onion, and top each serving with a fried egg.
