French Onion Mashed Potato Cakes
Our mashed potatoes are always an excellent choice and topping them with caramelized onions takes things up a level. These tangy potato cakes are delectable.
Ingredients
- 2 onions thinly sliced
- 2 Tablespoons olive oil
- 1 Tablespoon balsamic vinegar
- 24 Ounces Bob Evans Original Mashed Potatoes
- 2 Cups panko breadcrumbs
- 2 Cups Gruyere cheese shredded, divided
- 2 Large eggs lightly beaten
- 1 Tablespoon fresh thyme minced

- Preheat oven to 425°F.
- Cook onions in hot oil in a large skillet over medium heat, covered, 5 minutes or until onions are almost tender; stir in 2 Tbsp vinegar. Uncover, and cook 15 minutes longer, stirring occasionally, until onions are browned and tender, stirring often.
- Meanwhile, stir together mashed potatoes, breadcrumbs, 1 cup cheese, beaten eggs, and thyme. Form mixture into patties, about 1-inch thick.
- Spread caramelized onions over tops of patties, and sprinkle with remaining cheese.
- Bake 15 to 20 minutes or until browned and crisp.
- Garnish with additional fresh thyme leaves.
Use a biscuit cutter or ring mold to form perfect patties.
