4-Cheese Potato Casserole

Ingredients
- 1/4 Cup butter
- 1 Cup onion diced
- 2 Cloves garlic minced
- 1/4 Cup all purpose flour
- 1 Cup chicken broth
- 1 Cup milk
- 4 Ounces cream cheese softened
- 1 Cup mozzarella cheese shredded
- 1 Cup Havarti cheese shredded
- 1/2 Cup parmesan cheese shredded

- Preheat oven to 350°F.
- Melt butter in a large Dutch oven over medium heat. Add onion and garlic; cook, stirring frequently, until onion is tender.
- Add flour; cook, stirring constantly, 2 minutes.
- Gradually stir in broth and milk; cook until mixture is thickened and bubbly.
- Reduce heat, and gradually stir in cheeses until melted.
- Stir in potatoes until blended. Season with salt and pepper, if desired.
- Spoon mixture into a lightly greased 2½-quart baking dish. Bake 40 to 45 minutes or until potatoes are tender and casserole is hot and bubbly.
