Air Fryer Loaded Mashed Potato Balls
This recipe takes everything you love about loaded mashed potatoes and makes them even better. The tasty balls are crisp on the outside, soft on the inside, infused with bacon and perfect for dipping.
Ingredients
- 1 Package Bob Evans Original Mashed Potatoes
- 6 Slices bacon cooked and crumbled
- 1 Cup cheddar cheese shredded
- 2 Large eggs divided
- 2 Cups panko breadcrumbs divided
- 1 Cup ranch dressing

- Stir together mashed potatoes, bacon, cheese, 1 egg, and 1 cup breadcrumbs. Shape mixture into 2 inch balls and place on a parchment paper-lined baking sheet. Cover, and refrigerate at least 4 hours or up to 2 days.
- Preheat air fryer to 400°F.
- Lightly beat remaining egg in a shallow bowl. Place remaining breadcrumbs in a separate bowl.
- Dip potato balls in egg; dredge in breadcrumbs to coat.
- Spray air fryer basket with olive oil cooking spray. Arrange potato balls, in a single layer, ½-inch apart, in basket. Air fry, in batches, 8 to 9 minutes or until potato balls are browned and crisp.
- Serve with dressing, for dipping.
Garnish with chopped fresh parsley, if on hand.
