Instructions

  1. In a mixing bowl, add flour, Bob Evans Original Mashed Potatoes and an egg. Continue mixing until a sticky dough forms.
  2. Place the dough on a lightly floured surface. Knead the dough until it becomes smooth. Add more flour as needed to prevent sticking.
  3. Roll out the dough to a thickness of about ½ inch. Using a knife, cut the dough into pieces approximately ¾ inch in size. To create the traditional gnocchi shape, use a fork to gently roll each piece, creating a ridged pattern on one side.
  4. Bring a pot of lightly salted water to a boil. Carefully add the gnocchi to the boiling water and cook for about 1 minute, or until they float to the top.
  5. Once the gnocchi are cooked, serve with your favorite sauce!
