Mashed Potato Gnocchi

Ingredients
- 1 Package Bob Evans Original Mashed Potatoes
- 1 1/2 Cups all-purpose flour
- 1 egg

- In a mixing bowl, add flour, Bob Evans Original Mashed Potatoes and an egg. Continue mixing until a sticky dough forms.
- Place the dough on a lightly floured surface. Knead the dough until it becomes smooth. Add more flour as needed to prevent sticking.
- Roll out the dough to a thickness of about ½ inch. Using a knife, cut the dough into pieces approximately ¾ inch in size. To create the traditional gnocchi shape, use a fork to gently roll each piece, creating a ridged pattern on one side.
- Bring a pot of lightly salted water to a boil. Carefully add the gnocchi to the boiling water and cook for about 1 minute, or until they float to the top.
- Once the gnocchi are cooked, serve with your favorite sauce!
