Quiche Stuffed Breakfast Bagel
Two breakfast favorites collide with this fun mashup. The bagel enclosed quiches are easy to serve and downright delicious. They’re perfect for a Sunday brunch or party appetizer. Created in collaboration with So Yummy.
Ingredients
- 1/2 Cup Simply Potatoes Shredded Hash Browns
- 1/2 Cup Bob Evans Original Roll Pork Sausage
- 1 Cup Bob Evans 100% Liquid Egg Whites – 16 Ounces
- 1/4 Cup red onion diced
- 1 Tablespoon chives chopped
- 1/4 Cup cheddar cheese shredded
- 2 bagels halved

- Preheat your oven to 350ºF.
- Scoop out the centers of each bagel half, being careful not to tear through the bottom or sides. Discard the center portion of the bagels.
- In a pan, pre-cook Bob Evans Original Roll Pork Sausage until it is slightly crispy. Remove the cooked sausage from the heat and transfer it to a medium-sized mixing bowl.
- To the bowl with the cooked sausage, add Bob Evans Simply Potatoes Shredded Hash Browns, Bob Evans Liquid Egg Whites, chopped red onion, shredded cheddar cheese. Mix all the ingredients together until well combined.
- Place the hollowed-out bagels on a parchment-lined baking sheet. Carefully pour the quiche mixture into each bagel. Bake for 20 minutes.
- Garnish with chopped chives and enjoy!
