  1. Cook sausage in a large skillet over medium heat until browned and crumbly; drain, and set aside.
  2. Preheat griddle or a large nonstick skillet over medium heat.
  3. Stir together flour, sugar, baking powder, baking soda, and salt in a large bowl. Add buttermilk, butter, liquid egg white, and ¼ cup maple syrup, stirring to blend. Stir in half of crumbled sausage.
  4. Drop batter by ¼ cupfuls onto griddle, and cook 3 to 4 minutes or until tops are covered with bubbles. Turn and cook other side 1 minute.
  5. Top pancakes with remaining sausage and serve with syrup.
