Ingredients

  • 2 Packages Bob Evans Mashed Sweet Potatoes
  • 2 Large eggs
  • 3 Tablespoons honey
  • 1 1⁄2 Teaspoons ground cinnamon divided
  • 1⁄4 Teaspoons ground nutmeg
  • 1 Cup packed brown sugar
  • 1⁄3 Cup all purpose flour
  • 1⁄4 Cup butter melted
  • 1 Cup chopped pecans

Instructions

  1. Preheat the oven to 350F.
  2. Heat potatoes according to package directions and spoon into a large bowl.
  3. Add beaten eggs, honey, 1⁄2 tsp cinnamon, and nutmeg, stirring until blended. Spoon into a lightly greased 11-x 7-inch baking dish.
  4. Stir together brown sugar, flour, melted butter, and 1 tsp cinnamon until blended. Stir in pecans.
  5. Sprinkle over sweet potato mixture.
  6. Bake 30 to 35 minutes or until streusel is golden brown.
  7. Serve and enjoy!
