Bacon, Cheese & Mashed Potatoes on a Crust
This non-traditional and fun recipe combines Bob Evans Sour Cream and Chive Mashed Potatoes with bacon and cheddar cheese for a twist everyone will be talking about!
Ingredients
- 16 slices bacon
- 2 premade large pizza crusts
- 1 package Bob Evans Sour Cream & Chives Mashed Potatoes
- 1 cup cheddar cheese shredded

- Preheat oven to 450F.
- In a large skillet, cook and brown the bacon. Drain on a paper towel and crumble into bite sized pieces.
- In a bowl, mix together container of Bob Evans Sour Cream & Chives Mashed Potatoes and bacon crumbles.
- Place each pizza crust on cookie sheet. Spread half of the mashed potato mixture evenly over each pizza. Top each pizza with cheddar cheese.
- Bake 8-10 minutes or until cheese is melted and lightly golden. Cut into wedges and serve.
