Chicken Fajita-Inspired Macaroni & Cheese
Ingredients
- 1 Tablespoon vegetable oil
- 1/2 Cup onion chopped
- 1/2 Cup bell pepper chopped
- 1/2 Teaspoon minced garlic
- 20 Ounces Bob Evans Macaroni & Cheese
- 2 Cups rotisserie chicken shredded
- 1 1/2 Cups Pepper Jack cheese shredded
- 3/4 Teaspoon chili powder
- 3/4 Teaspoon cumin
- 1/4 Teaspoon black pepper
- Salsa for dipping
- Sour cream for dipping

- Preheat oven to 375 F. Spray an 8x8 baking dish with non-stick spray. Set aside.
- In a large skillet, heat 1 tablespoon of vegetable oil and add the chopped onions, bell pepper and garlic. Sauté for 5 minutes.
- In a large mixing bowl, combine together all ingredients, reserving 1/2 cup pepper jack.
- Pour mixture into prepared baking dish. Top with remaining 1/2 cup pepper jack cheese.
- Bake for 25-30 minutes. Carefully remove from oven and allow to cool for 5 minutes before serving. Serve with sour cream and salsa.
