English Muffin Breakfast Pizzas
Pizza for breakfast? Umm … yes! This English muffin-style breakfast pizza features eggs, cheese, Bob Evans® sausage and veggies, but they can be customized to your heart’s content.
Ingredients
- 2 Tablespoons butter
- 8 Ounces mushrooms sliced
- 1/2 Cup green bell pepper diced
- 7 Bob Evans Original Pork Sausage Links sliced
- 8 Large eggs
- 3 Tablespoons milk
- 6 Thomas English Muffins split and toasted
- 8 Ounces mozzarella cheese shredded
Fresh basil leaves for garnish (optional)

- Melt butter in a large skillet over medium heat.
- Add mushrooms, bell pepper, and sausage. Cook 5 to 6 minutes or until vegetables are tender and sausage is done. Remove from skillet.
- Whisk together eggs and milk in a bowl.
- Add egg mixture to skillet; cook 2 minutes until mixture begins to set on bottom (do not stir).Draw a spatula through mixture to form large curds. Cook just until thickened.
- Remove from heat, and stir in vegetable mixture.
- Preheat broiler.
- Divide egg mixture over toasted muffins. Sprinkle with cheese.
- Broil 2 to 3 minutes or until cheese is melted.
