English Muffin Breakfast Pizzas

Pizza for breakfast? Umm … yes! This English muffin-style breakfast pizza features eggs, cheese, Bob Evans® sausage and veggies, but they can be customized to your heart’s content.

Ingredients

Fresh basil leaves for garnish (optional)

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add mushrooms, bell pepper, and sausage. Cook 5 to 6 minutes or until vegetables are tender and sausage is done. Remove from skillet.
  3. Whisk together eggs and milk in a bowl.
  4. Add egg mixture to skillet; cook 2 minutes until mixture begins to set on bottom (do not stir).Draw a spatula through mixture to form large curds. Cook just until thickened.
  5. Remove from heat, and stir in vegetable mixture.
  6. Preheat broiler.
  7. Divide egg mixture over toasted muffins. Sprinkle with cheese.
  8. Broil 2 to 3 minutes or until cheese is melted.
Note: Garnish with fresh basil leaves, if on hand.
