Ingredients

  • 1 Package Bob Evans Original Roll Pork Sausage
  • 1 red bell pepper chopped
  • 1/2 Cup red onion sliced
  • 5 Ounces baby spinach
  • 3 Thomas' Everything Bagels cubed and toasted
  • 10 Large eggs
  • 1 1/2 Cups milk
  • 2 Tablespoons Dijon mustard
  • 1 1/2 Cups Gruyere cheese shredded
  • 6 Ounces cream cheese cut into small cubes
  • 1 Tablespoon everything bagel seasoning optional

Instructions

  1. Cook sausage, bell pepper, and onion in a large skillet over medium heat until sausage is browned and crumbly; drain, and place in a large bowl.
  2. Add spinach, tossing to wilt.
  3. Add toasted bagel cubes; toss.
  4. Whisk together eggs, milk, and Dijon in a bowl. Add to sausage mixture; toss.
  5. Stir in shredded cheese.
  6. Cover, and refrigerate at least 2 hours or overnight.
  7. Preheat oven to 350°F.
  8. Spoon sausage mixture into a lightly greased 13 x 9-inch baking dish. Scatter cream cheese over top of mixture and sprinkle with seasoning, if using.
  9. Bake 35 to 45 minutes or until center is puffed and set.
