Everything Bagel Breakfast Casserole
Full of color, flavor and texture, this everything bagel breakfast casserole is tough to beat.
Ingredients
- 1 Package Bob Evans Original Roll Pork Sausage
- 1 red bell pepper chopped
- 1/2 Cup red onion sliced
- 5 Ounces baby spinach
- 3 Thomas' Everything Bagels cubed and toasted
- 10 Large eggs
- 1 1/2 Cups milk
- 2 Tablespoons Dijon mustard
- 1 1/2 Cups Gruyere cheese shredded
- 6 Ounces cream cheese cut into small cubes
- 1 Tablespoon everything bagel seasoning optional

- Cook sausage, bell pepper, and onion in a large skillet over medium heat until sausage is browned and crumbly; drain, and place in a large bowl.
- Add spinach, tossing to wilt.
- Add toasted bagel cubes; toss.
- Whisk together eggs, milk, and Dijon in a bowl. Add to sausage mixture; toss.
- Stir in shredded cheese.
- Cover, and refrigerate at least 2 hours or overnight.
- Preheat oven to 350°F.
- Spoon sausage mixture into a lightly greased 13 x 9-inch baking dish. Scatter cream cheese over top of mixture and sprinkle with seasoning, if using.
- Bake 35 to 45 minutes or until center is puffed and set.
