Ingredients

  • 1 Pound Owens Hot Pork Sausage
  • 1 Cup celery diced
  • 1 Cup onion diced
  • 16 Ounces baked beans
  • 1 Cup barbeque sauce
  • 1 3/4 Cups tomatoes diced
  • 1 1/4 Teaspoons garlic powder
  • 3 Dashes hot sauce
  • Salt and pepper to taste
  • 1 Cup cheddar cheese shredded, to serve
  • 1/3 Cup sour cream to serve
  • 1/4 Cup green onions diced, to serve
  • Tortilla chips to serve

Instructions

  1. Crumble and cook sausage in a large skillet or soup pot, over medium-high heat until browned. Drain sausage.
  2. Add celery and onion to sausage and continue to cook over medium heat until vegetables are slightly tender and sausage is no longer pink.
  3. Add baked beans, barbecue sauce and mix well.
  4. Add tomatoes, garlic powder, hot sauce, salt and pepper to mixture. Simmer together for 5 to 10 minutes and serve in a large bowl.
  5. Garnish with cheddar cheese, sour cream and diced green onions on top, if desired. Serve with tortilla chips. Refrigerate leftovers.
