Greek Potato Dip
Herby and lemony, this potato-based dip is oh so fresh. It's a little unexpected, but in a good way.
Ingredients
- 1 Cup slivered almonds
- 1/4 Cup olive oil
- 5 Tablespoons lemon juice
- 4 Cloves garlic
- 24 Ounces Bob Evans Original Mashed Potatoes
- 1 green onion diced
- 1 Tablespoon parsley minced
- 1 Tablespoon dill minced
- 18 Ounces baked pita chips

- Preheat oven to 400°F.
- Process almonds, olive oil, lemon juice, and garlic in a food processor until a paste forms. Spoon into a large bowl.
- Add mashed potatoes, green onion, parsley, and dill; stir until blended.
- Spoon into a 1-quart baking dish. Bake 20 to 25 minutes or until thoroughly heated.
- Serve with pita chips.
Garnish with fresh dill, if on hand.
