Hot Potato Salad Casserole
Potato salad is a staple at summer gatherings, but this hot version of the dish begs to be served year-round. And thanks to Simply Potatoes® Diced Potatoes, there’s no need for boiling, peeling or dicing the spuds!
Ingredients
- 6 Slices bacon
- 1 Cup celery diced
- 3 green onions sliced
- 1 Package Simply Potatoes Diced Potatoes
- 1/2 Cup mayonnaise
- 1/4 Cup red wine vinegar
- 2 Teaspoons honey
- 1 Teaspoon Dijon mustard
- 1 Cup fontina cheese shredded

- Preheat oven to 350°F.
- Cook bacon in a large skillet over medium heat until crisp. Remove bacon from skillet, reserving 2 Tbsp drippings in skillet.
- Add celery and onions to hot drippings; cook, stirring, 5 minutes or until vegetables are tender. Remove from heat, and stir in potatoes, mayonnaise, vinegar, honey, Dijon, cheese, and bacon; season with salt and pepper, if desired.
- Spoon mixture into a lightly greased 11- x 7-inch baking dish. Bake 30 to 35 minutes or until potatoes are tender.
