Huevos Rancheros
Loaded with Hot Pork Sausage, beans and salsa, this egg dish is the kick you need in the morning.
Ingredients
- 1 Package Owens Hot Pork Sausage
- 15 Ounces canned black beans drained and rinsed
- 1 Cup salsa
- 6 corn tortillas
- Cooking spray
- 6 eggs
Optional toppings: shredded cheddar cheese, sour cream, salsa, sliced avocado, diced jalapeño, diced green onion

- In large non-stick skillet over medium heat, crumble and cook sausage until browned.
- Stir in black beans and salsa. Cook 1 to 2 minutes or until hot.
- Pour into bowl and keep warm. Wipe out skillet.
- Spray both sides of tortillas with cooking spray. Toast on each side in skillet over medium heat until lightly brown. Place one tortilla on each serving plate.
- In same skillet over medium-low heat, cook eggs to desired degree of doneness.
- Top each tortilla with about 3/4 cup sausage mixture and one fried egg.
- Add any optional toppings and serve.
