Loaded Mashed Potato Balls
We took some of Americans' favorite comfort foods (mashed potatoes, bacon, cheese), rolled them together, fried them to golden perfection and created something truly magical. You can thank us later.
Ingredients
- 8 Slices bacon
- 24 Ounces Bob Evans Sour Cream & Chives Mashed Potatoes
- 1 Cup cheddar cheese shredded
- 2 1/2 Cups panko breadcrumbs divided
- 2 Large eggs lightly beaten
- 1 Large egg
- 48 Ounces vegetable oil
- 1 Cup ranch dressing

- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels and crumble.
- Stir together potatoes, cheese, 1½ cups breadcrumbs, 2 beaten eggs, and crumbled bacon in a bowl. Cover, and refrigerate at least 4 hours.
- Place remaining 1 cup breadcrumbs in a shallow dish. Form mashed potato mixture into 1½-inch balls. Lightly beat 1 egg in a shallow dish. Dip potato balls in beaten egg, roll in breadcrumbs to coat.
- Meanwhile, pour oil to a depth of 4 inches in a Dutch oven. Heat over medium heat to 360°F.
- Fry potato balls, in batches, 5 to 6 minutes or until golden brown. Drain on a wire rack set over paper towels.
- Serve immediately with Ranch dressing, for dipping.
Garnish with fresh chives, if on hand.
