Loaded Mashed Potato Dinner Rolls
These potato-filled dinner rolls are perfect as a savory appetizer or a fun twist on the classic dinner roll. Soft and garlicky, they’re sure to satisfy even the pickiest of eaters. Created in collaboration with So Yummy.
Ingredients
- 1 Package Bob Evans Original Mashed Potatoes
- 20 Ounces premade biscuit dough
- 1/4 Cup bacon bits
- 3 Tablespoons chives chopped
- 7 Cubes cheddar cheese
- 2 Tablespoons unsalted butter melted
- 1 Teaspoon garlic powder

- Preheat your oven to 375ºF.
- Remove the Bob Evans Original Mashed Potatoes from the refrigerator. Add bacon and chives to the container and mix until well combined.
- Use a small cookie scoop to create 7 mashed potato balls. Take a cheddar cheese cube and press into the center of each ball. Place the stuffed potato balls onto a parchment-lined baking sheet and transfer them to the freezer for 30 minutes.
- Roll out the pre-made dough and wrap a piece around each potato ball. Place each dough-covered ball back onto the parchment-lined baking sheet.
- Stir garlic powder into the melted butter. Brush this garlic butter mixture over each dough-covered potato ball.
- Bake the potato balls for 20 minutes.
- Once baked, remove the stuffed mashed potato balls from the oven and let them cool for a few minutes before serving. Enjoy!
