Loaded Mashed Potato Waffles
Ingredients
- 1 Cup pancake and waffle mix
- 1/2 Cup buttermilk
- 2 eggs
- 2 Tablespoons oil
- 1 Package Bob Evans Loaded Mashed Potatoes
- 1/2 Cup shredded sharp Cheddar cheese
- 1/2 Cup sour cream
- 2 Tablespoons green onion chopped

- Preheat waffle maker.
- In large bowl, combine pancake and waffle mix, buttermilk, egg and oil. Add potatoes and cheese.
- Cook waffles according to waffle maker instructions, about 6 minutes each.
- Serve topped with sour cream and green onion.
