
Loaded Potato Buffalo-Style Chicken Casserole
This easy recipe makes a one-dish chicken dinner. With crisp, spicy potatoes and all the "loaded" baked potato toppings - Cheddar cheese, bacon, onion - it's a match made in casserole heaven.
Ingredients
- 1/3 Cup + 2 Tablespoons buffalo wing sauce divided
- 2 Tablespoons olive oil
- 6 Cloves garlic chopped
- 6 Cups Simply Potatoes Diced Potatoes with Onions
- 2 Cups cooked chicken chopped
- 2-1/2 cups (10 ounces) Crystal Farms® Shredded Sharp Cheddar Cheese
- 3/4 Cup bacon cooked and crumbled
- 3/4 cup green onion chopped
- Ranch dressing to serve

- Heat oven to 425 F. Spray a 9x13-inch baking dish with cooking spray.
- Mix 1/3 cup buffalo wing sauce, oil, and garlic in large bowl. Stir in Simply Potatoes Diced Potatoes with Onions until well coated.
- Spread in even layer in prepared baking dish. Bake 20 to 25 minutes, stirring occasionally, until crisp and tender.
- Toss chicken in bowl with remaining 2 tablespoons hot sauce.
- When potatoes are tender, sprinkle with 1/2 cup cheese; top with chicken, bacon, and remaining 2 cups cheese. Return baking dish to oven; bake 10 to 15 minutes or until cheese is melted and bubbly.
- Remove from oven; sprinkle with green onions. Serve with ranch dressing.
