Mediterranean-Style Macaroni & Cheese
Our macaroni & cheese combined with chicken, artichoke, red peppers, olives, and other delicious ingredients turn it into a fabulous Mediterranean-style version macaroni and cheese.
Ingredients
- 20 Ounces Bob Evans Macaroni & Cheese
- 2 Cups roasted chicken breast
- 14.5 Ounces quartered artichoke hearts in brine drained and chopped
- 1/2 Cup roasted red peppers chopped
- 1/3 Cup feta cheese crumbled
- 10 kalamata olives chopped
- Fresh parsley chopped for garnish (optional)

- Preheat oven to 375F. Spray a small casserole dish with nonstick spray.
- In a medium bowl, combine the macaroni and cheese, chicken, artichoke hearts and peppers. Spoon into prepared dish and sprinkle with feta and olives.
- Bake 25 to 30 minutes or until heated through. Alternately, you can choose to microwave this dish for 6-8 minutes, until heated through.
- Garnish with parsley and serve.
