Mini Samosas
Great for entertaining your friends or a night in with your family, these mini samosas are the perfect twist on a South Asian classic.
Ingredients
- 1 Tablespoon vegetable oil
- 1/2 Cup onion minced
- 1 Teaspoon ginger minced
- 1 Cup frozen peas
- 1/4 Teaspoon cumin
- 2 Teaspoons yellow curry powder
- 1/2 Teaspoon salt
- 1/4 Teaspoon black pepper
- 1/8 Teaspoon cayenne pepper
- 24 Ounces Bob Evans Original Mashed Potatoes
- 4 Packages prepared phyllo shells

- In a large skillet, heat vegetable oil over medium low heat. Saute together the onions, garlic and ginger until onions are translucent.
- Stir peas into onion mixture. Add cumin, yellow curry powder, salt, black pepper and cayenne. Mix well.
- Stir in Bob Evans Original Mashed Potatoes. Warm until heated through.
- Carefully spoon about 1 teaspoon of mashed potato mixture into prepared phyllo shells.
