Mini Sausage Pizzas
Let kids pick their own toppings for these mini pizzas, or serve them up as an appetizer at your next get-together.
Ingredients
- 1 Pound Bob Evans Italian Pork Sausage Roll
- 6 3-inch mini Kaiser rolls
- 3/4 Cup prepared marinara sauce
- 10 Ounces frozen chopped spinach thawed, well drained
- 2 Tablespoons parmesan cheese grated
- 1 1/4 Cups shredded mozzarella cheese divided

- Preheat oven to 375F.
- Split rolls horizontally in half. Scoop out insides, leaving 1/2-inch thick shell; set aside.
- Cook sausage in large skillet on medium-high heat until browned and crumbled; drain well. Add marinara sauce, spinach, Parmesan cheese and 1/2 cup of the shredded mozzarella; mix well.
- Spoon 1/4 cup sausage mixture into each hollowed out roll. Sprinkle each with 1 tablespoon shredded mozzarella. Place on baking sheet.
- Bake 12 to 15 minutes or until cheese is melted. Try with English muffins for an even more kid-friendly appeal!
