Potato and Corn Chowder
This one-pot soup comes together FAST. It's creamy and delicious, perfect for a meatless meal or a satisfying side dish.
Ingredients
- 2 Tablespoons butter
- 1 Cup onion chopped
- 2 Cloves garlic minced
- 2 Tablespoons all purpose flour
- 3 Cups chicken broth
- 1 1/2 Cups milk
- 24 Ounces Bob Evans Original Mashed Potatoes
- 12 Ounces frozen corn
- 1 Teaspoon salt
- 1/2 Teaspoon pepper
- 1 Cup paremsan cheese freshly shredded
- 2 Tablespoons fresh tyme minced, divided

- Melt butter in a Dutch oven over medium heat. Add onion and garlic; cook, stirring occasionally, until onion is tender.
- Add flour; cook, stirring constantly, 2 minutes.
- Gradually stir in broth and milk. Cook, stirring occasionally, until slightly thickened.
- Stir in mashed potatoes, corn, salt, and pepper. Cook, stirring occasionally, until soup is thoroughly heated.
- Stir in cheese and 1 Tbsp thyme. Garnish soup with additional cheese and remaining thyme, if desired.
