Reuben Stuffed Bread
Ingredients
- 2 Loaves crusty Italian bread
- 1 Package Bob Evans Original Mashed Potatoes
- 1/3 Pound thickly sliced corned beef cut into ½ inch pieces
- 14 Ounces sauerkraut drained
- 1 Tablespoon spicy brown mustard
- 1 Cup Swiss cheese shredded
- Thousand Island dressing for dipping

- Preheat oven to 400 F.
- Using a serrated knife, cut an oval in the top of the Italian bread scooping out the bread to create a well. Place on baking sheet.
- In a large mixing bowl, mix together remaining ingredients.
- Divide mixture between two loaves of bread.
- Cover with foil and bake 30 minutes.
- Remove foil after 30 minutes and continue baking for an additional 30 minutes.
- Carefully remove from oven and allow to cool for 5 minutes before serving.
- Serve with a side of Thousand Island dressing.
