- 1 Cup chopped onion
- 4 Tablespoons olive oil divided
- 3 Tablespoons capers
- 2 Tablespoons chopped fresh parsley
- 2 Tablespoons chopped fresh dill
- 2 Teaspoons lemon zest

- Preheat oven to 400°F.
- Toss together potatoes, onion, and 2 Tbsp oil on a lightly greased large rimmed baking sheet; spread in a single layer.
- Bake 20 minutes or until potatoes are browned and crisp.
- Meanwhile, pat capers dry with a paper towel.
- Cook capers in 2 Tbsp hot oil in a large skillet over medium heat until browned.
- Stir in parsley, dill, and lemon zest.
- Toss crispy potato mixture and caper mixture in a bowl until potatoes are coated with herbs.
