Ingredients

  • 20 Ounces Simply Potatoes Diced Potatoes
  • 1 Cup chopped onion
  • 4 Tablespoons olive oil divided
  • 3 Tablespoons capers
  • 2 Tablespoons chopped fresh parsley
  • 2 Tablespoons chopped fresh dill
  • 2 Teaspoons lemon zest

Instructions

  1. Preheat oven to 400°F.
  2. Toss together potatoes, onion, and 2 Tbsp oil on a lightly greased large rimmed baking sheet; spread in a single layer.
  3. Bake 20 minutes or until potatoes are browned and crisp.
  4. Meanwhile, pat capers dry with a paper towel.
  5. Cook capers in 2 Tbsp hot oil in a large skillet over medium heat until browned.
  6. Stir in parsley, dill, and lemon zest.
  7. Toss crispy potato mixture and caper mixture in a bowl until potatoes are coated with herbs.
  8. Season with salt and pepper, as desired. Enjoy!
