Sausage and Roasted Potato-Pepper Hash

Ingredients
- 1 Package Simply Potatoes Diced Potatoes
- 1 Package Bob Evans Original Pork Sausage Links
- 3 Tablespoons olive oil divided
- 1 Teaspoon kosher salt
- 1⁄2 Teaspoon pepper
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1 green bell pepper chopped
- 1 Cup chopped onion
- 3 Cloves garlic minced
- 6 Large eggs
- 1⁄4 Cup fresh cilantro leaves

- Preheat oven to 425°F.
- Toss together potatoes and 2 Tbsp oil on a lightly greased large rimmed baking sheet.
- Add bean mixture, remaining can of beans, remaining broth, and thyme to sausage mixture.
- Spread in a single layer and sprinkle with salt and pepper.
- Bake 10 minutes.
- Toss together peppers, onion, garlic, and 1 Tbsp oil in a large bowl; carefully add to potatoes on pan, and spread in a single layer.
- Bake 15 minutes longer or until potatoes are browned and tender.
- Meanwhile, cook sausage according to package directions; cut into 1-inch pieces and add to potato mixture. Toss.
- Heat a large nonstick skillet over medium heat.
- Coat skillet with cooking spray. Crack 3 eggs into skillet; cover and cook 2 to 3 minutes or until whites are set and yolks are cooked to desired doneness.
- Repeat with remaining eggs. Divide potato mixture among 6 plates. Top each with a fried egg and cilantro.
