Sausage and Roasted Potato-Pepper Hash

Ingredients

  • 1 Package Simply Potatoes Diced Potatoes
  • 1 Package Bob Evans Original Pork Sausage Links
  • 3 Tablespoons olive oil divided
  • 1 Teaspoon kosher salt
  • 1⁄2 Teaspoon pepper
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 green bell pepper chopped
  • 1 Cup chopped onion
  • 3 Cloves garlic minced
  • 6 Large eggs
  • 1⁄4 Cup fresh cilantro leaves

Instructions

  1. Preheat oven to 425°F.
  2. Toss together potatoes and 2 Tbsp oil on a lightly greased large rimmed baking sheet.
  3. Add bean mixture, remaining can of beans, remaining broth, and thyme to sausage mixture.
  4. Spread in a single layer and sprinkle with salt and pepper.
  5. Bake 10 minutes.
  6. Toss together peppers, onion, garlic, and 1 Tbsp oil in a large bowl; carefully add to potatoes on pan, and spread in a single layer.
  7. Bake 15 minutes longer or until potatoes are browned and tender.
  8. Meanwhile, cook sausage according to package directions; cut into 1-inch pieces and add to potato mixture. Toss.
  9. Heat a large nonstick skillet over medium heat.
  10. Coat skillet with cooking spray. Crack 3 eggs into skillet; cover and cook 2 to 3 minutes or until whites are set and yolks are cooked to desired doneness.
  11. Repeat with remaining eggs. Divide potato mixture among 6 plates. Top each with a fried egg and cilantro.
  12. Enjoy!
