Sausage Potato Soup
This hearty and delicious sausage and potato soup is a wonderful way to warm up on those cold winter nights!
Ingredients
- 1 Pound Bob Evans Original Roll Pork Sausage
- 2 Tablespoons olive oil
- 1 onion chopped
- 1/4 Teaspoon salt
- 1/4 Teaspoon black pepper
- 1/4 Teaspoon red pepper flakes
- 14.5 Ounces sodium-free chicken broth
- 6 Ounces cooked chicken strips
- 20 Ounces precut home fry (diced) potatoes thawed
- 1 Tablespoon parsley chopped
- 1 Bunch kale

- In soup pot, crumble and brown sausage with olive oil over medium heat.
- Add onions and sauté for 3-4 minutes longer.
- Add salt, peppers, broth, chicken strips, potatoes and parsley.
- Bring to boil and immediately turn down to simmer. Simmer for 10 minutes then add kale.
- Cover and simmer for an additional 10 minutes. Refrigerate leftovers.
