Sausage & Rice Casserole
A vegetable flavored rice mix makes easy work of this sausage casserole.
Ingredients
- 5.8 Ounces vegetable flavor rice mix
- 1 Pound Bob Evans Zesty Hot Pork Sausage Roll
- 16 Ounces frozen green, red, and yellow peppers and onions
- 1 Cup celery chopped
- 10.5 Ounces condensed cream of mushroom soup
- 1 Cup milk
- Salt and pepper to taste
- 1/2 cup Colby cheese shredded

- Preheat oven to 350F. Lightly grease a 2-quart baking dish.
- Cook rice according to package directions. Transfer to large bowl.
- In medium skillet, cook and crumble sausage until brown.
- Stir sausage, vegetables, soup, milk, salt and pepper into cooked rice; mix well.
- Spoon mixture into baking dish. Sprinkle with cheese.
- Bake uncovered, 40 minutes or until heated through, serve hot. Refrigerate leftovers.
