Sausage Spinach Dip

Ingredients
- 1 Tablespoon olive oil
- 1/2 Cup white onion finely chopped
- 1 Pound Owens All Natural* Pork Sausage
- 1 Bag baby spinach chopped
- 2 Tablespoons unsalted butter
- 2 Tablespoons all-purpose flour
- 3/4 Cup heavy cream
- 1/2 Cup garlic herb cheese spread
- Salt and black pepper to taste
- Crostinis, crackers or chips to serve

- Heat oil in medium frying pan over medium heat, add onion and sauté until translucent.
- Add Owens Naturally! Original Sausage and crumble over medium heat until fully cooked, about 5 minutes.
- Add chopped spinach into the pan with the cooked sausage and onion. Cover and cook until the spinach is wilted, about 2 to 3 minutes. Remove from heat and set aside.
- In a separate medium pan, melt the unsalted butter over medium heat and add the all-purpose flour. Whisk constantly to make a roux.
- When the roux begins to bubble and thicken, remove from heat. Add the heavy cream and garlic herb cheese and whisk until cheese is melted and sauce is smooth.
- Return the pan to low heat, cover and simmer for 10 minutes, stirring occasionally.
- Remove from heat and stir in the spinach and sausage into the finished sauce.
- Season to taste with salt and pepper. Serve hot with crostini, crackers or chips.
