Sausage Stuffed Squash
Squash stuffed with savory Original Pork Sausage makes this the perfect dish for fall.
Ingredients
- 1 Pound Owens Original Pork Sausage Roll
- 1 Cup onion diced
- 1/3 Cup celery diced
- 5 medium yellow squash or zucchini
- 6 Ounces stuffing mix
- 1 3/4 Cups water
- Salt and pepper to taste

- Preheat oven to 350 F.
- In large skillet, cook and crumble sausage until brown. Add onion and celery and cook until tender.
- Meanwhile, cut squash in half lengthwise and scoop out seeds, leaving 1/4 inch shell. Place in large baking dish and sprinkle with salt and pepper.
- When sausage is brown, remove from heat and stir in stuffing and water. Stuff each squash half with sausage mixture.
- Cover pan and bake 20 minutes. Uncover and bake an additional 10 to 20 minutes or until squash is tender and stuffing is browned.
