Beef Shepherd’s Pie with Sloppy Joe Tomato Sauce

Ingredients

  • 1 1/2 Pounds ground beef
  • 1/2 Cup sweet onion finely diced
  • 1 green bell pepper finely diced
  • 2 carrots finely diced
  • 3/4 Cup ketchup
  • 2 Tablespoons yellow mustard
  • 2 Tablespoons brown sugar
  • 1 Tablespoon white distilled vinegar
  • 1 Teaspoon Worcestershire sauce
  • 1 Teaspoon salt
  • 1/2 Teaspoon ground pepper
  • 1 Cup frozen corn
  • 1 Package Bob Evans Original Mashed Potatoes
  • 1 Cup cheddar cheese grated
  • 1 Tablespoon chives finely chopped

Instructions

  1. Heat a 12-inch oven safe skillet over medium heat and add the ground beef. Crumble the beef as it begins to brown.
  2. When about half of the beef is browned, add the onion, pepper, and carrots to the skillet. Continue cooking until the beef is cooked through. Drain the grease from the skillet.
  3. In a separate bowl, whisk together the ketchup, mustard, brown sugar, vinegar, Worcestershire sauce, salt, and pepper. Pour this mixture into the skillet with the beef.
  4. Cook over low heat, stirring occasionally for 15 minutes.
  5. Add the corn to the mixture and stir.
  6. In a separate bowl, combine the mashed potatoes, grated cheese, and chives.
  7. Spread the mashed potatoes evenly over the sloppy joe mixture.
  8. Place skillet in a preheated 350 degree oven and bake for 15 minutes. Serve immediately.
