Spicy Taco Mac and Cheese
Talk about a match made in heaven! This bold mashup of two classic favorites – tacos and mac and cheese – produces something pretty epic.
Ingredients
- 20 Ounces Bob Evans Queso Macaroni & Cheese
- 1⁄2 Cup sour cream
- 10 Ounces can diced tomatoes with green chiles drained
- 1 Pound ground beef
- 1.25 Ounces taco seasoning mix
- 10 Ounces enchilada sauce softened
- 8 Ounces shredded pepper Jack cheese divided
- 1 Cup grape tomatoes halved
- 1⁄4 Cup fresh cilantro leaves

- Preheat the oven to 400F.
- Heat Bob Evans® queso macaroni and cheese according to package directions; stir in sour cream and diced tomatoes and green chiles.
- Meanwhile, cook beef in a large skillet over medium heat until browned and crumbly; drain and return to skillet.
- Stir in taco seasoning and enchilada sauce; cook until very thick.
- Spoon half of macaroni and cheese mixture into a greased 2-quart baking dish.
- Top with meat mixture, 1 cup cheese, and remaining macaroni and cheese.
- Bake, covered, 15 minutes. Uncover and sprinkle with 1 cup cheese. Bake 5 minutes or until cheese is melted.
- Top with grape tomatoes and cilantro, enjoy!
