Sweet Potato Cornbread Muffins

- 2 Packages corn muffin mix
- 1 Package Bob Evans Mashed Sweet Potatoes
- 2 eggs
- 1 Tablespoon granulated sugar (optional)
- 1/4 Teaspoon pumpkin pie spice (optional)

- Preheat oven to 400F. Grease muffin tin with nonstick spray.
- Mix all ingredients together in large mixing bowl. Allow mix to rest for 2 minutes.
- Pour into prepared muffin tin. Bake for 20 -25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow muffins to cool at room temperature on a cooling rack. Serve with cinnamon sugar butter.
