Ingredients
- 1 Package Bob Evans Original Mashed Potatoes
- 1 Cup tortilla chips crushed
- 2 Cups Bob Evans Zesty Hot Pork Sausage Roll cooked and crumbled
- 1/2 Cup tomatoes diced
- 8 Ounces taco sauce
- 1/2 Cup cheddar cheese shredded
- 1/4 Cup sour cream
- 2/3 cup green onions (green tops only) diced
- 4 Taco-flavor chips for garnish
You can use either Bob Evans Original Roll Sausage or Bob Evans Zesty Hot Roll Sausage.

- Prepare Bob Evans Original Mashed Potatoes by following the recommended microwave instructions on the package.
- Place 3/4 cup of mashed potatoes in a martini glass.
- Sprinkle 1/4 cup of crushed tortilla chips over mashed potatoes.
- Place 1/2 cup of crumbled sausage in center of tortilla chips and evenly spread over crushed tortilla chips.
- Sprinkle 2 tablespoons of diced tomatoes over crumbled sausage.
- Spoon about 1 1/2 ounces of taco sauce over diced tomatoes.
- Sprinkle with 1 1/2 tablespoons of shredded cheddar cheese.
- Place a dollop of sour cream in center of glass.
- Garnish each lightly with diced green onion and one whole tortilla chip.
