Taco Shepherd’s Pie

Ingredients
- 1 Pound lean ground beef
- 1 onion diced
- 1 Packet low sodium taco seasoning mix
- 1/3 Cup water
- 1 1/2 Cups frozen corn
- 1 1/2 Cups red or green bell pepper diced
- 24 Ounces Bob Evans Original Mashed Potatoes
- 1 Cup cheddar cheese

- Preheat oven to 350 F and grease a casserole dish.
- Brown ground beef and onion and drain any fat once beef is cooked.
- Add taco seasoning mix, water, corn, bell pepper and cook until peppers are tender.
- Pour into greased casserole dish. Top with Bob Evans Original Mashed Potatoes and cheese.
- Bake at 350 F for 30-35 minutes or until heated through.
