Ingredients

  • 16 Ounces Bob Evans Original Roll Pork Sausage
  • 3/4 Cup onion finely chopped
  • 1 Cup red bell pepper finely chopped, divided
  • 16 Ounces cream cheese softened
  • 15 Ounces canned pinto beans rinsed and drained
  • 8 Ounces sour cream
  • 8 Ounces pepper Jack cheese shredded
  • 2 Teaspoons ground cumin
  • 1/4 Cup black olives sliced
  • 1 green onion sliced
  • 9.25 Ounces corn chips

Instructions

  1. Cook sausage, onion, and 3/4 cup bell pepper in a large skillet over medium heat until sausage is browned and crumbly; drain, and return to skillet. Add cream cheese, beans, sour cream, shredded cheese, and cumin.
  2. Spoon mixture into a 2-quart baking dish. Bake 25 minutes or until hot and bubbly.
  3. Top with olives, green onion, and 1/4 cup bell pepper. Serve with corn chips.
